Historic Bordeaux estate dating back to 1802, Château Haut Meyreau currently covers over 100 hectares in the Entre-Deux- Mers region. It serves as the foundation of our properties, both a model vineyard and a place of experimentation, where we have reintroduced polyculture principles in recent years.
Vineyard
Dating back to 1802, Château Haut-Meyreau forms the historic anchor of the estate, spanning over 100 hectares in Entre-Deux-Mers where agroecological polyculture has been reintroduced. The 25-year-old vines of Sauvignon Blanc, Sauvignon Gris, and Muscadelle are rooted in predominantly limestone soils. Cultivated with natural grass cover and controlled yields of 50 hl/ha, the plots allow the grapes to achieve generous aromatic ripeness while preserving vital acidity and a distinctly saline mineral drive.
Winemaking
Mechanical harvesting is carried out at night to protect the grape variety's aromatic precursors. The grapes are pressed without sulfiting. Cold settling with bio-protection yeasts is performed for 8 hours. Clarification is done earlier than in the traditional process. We deliberately leave a certain amount of lees in the must, as this provides a support for the indigenous yeasts and contains aromatic and structural compounds. Fermentation with indigenous yeasts lasts for nearly 6 weeks, and about 15% of the blend undergoes malolactic fermentation. After fermentation in stainless steel tanks, we proceed with aging on lees for 4 to 6 months.
Tasting notes
The palate is generous, with a smooth attack and fresh, saline finish.
